Tasting notes
Color: Intense straw-yellow.
Nose: Intense, varietal, complex and very subtle. Generous aromas of currants, hawthorn, viburnum, tomato leaves and nettles, followed by hints of sweet spice, gooseberries and pastry cream.
Palate: Extremely well-structured, with a beautifully balanced, refreshing viscose texture. Hints of citrus alongside fruit like white peaches, lychees, mango and cherry plums. Subtle spice, iodised and minerally, appears in the lingering finish backed by robust acidity.
Pairings
Excellent as an aperitif, it pairs well with asparagus, vegetable soups, vegetable soups and marinated fish.
Why we like it
A variety originally from France, Sauvignon was introduced into Friuli under the Habsburgs and became widely planted in the early 20th century. The wine is intense and captivating, with a generously wide, distinctive range of aromas, with notes of exotic fruit, yellow pepper, tomato leaf, mint and box hedge notes. It’s a traditional wine from Friuli. Mainly trained in the Guyot system, the vines of our Sauvignon benefit from marl and sandstone soils of Eocene origin. The healthy and perfectly ripe grapes are harvested by hand, to preserve the integrity of the berry. Carefully destemmed and left to macerate for a short period, the fruit is then soft crushed and the must obtained is allowed to settle. The must ferments in temperature-controlled stainless- steel tanks. After fermentation, the wine settles on the lees for a few months to enhance savoriness, creaminess and aging potential. The bottled wine is then aged in temperature-controlled binning cellar.
