Tasting notes
Color: Vibrant canary yellow.
Nose: Fresh and captivating with fruity aromas of Granny Smith apples and honeydew melon, alongside citrus hints of lime and lemon zest, and subtle notes of dandelion and chamomile. A touch of marine notes of Wakame seaweed precedes hints of wildflower honey closing on balsamic sensations.
Palate: Fresh, lively and summery with notes of mapo, green apple and white peaches. Hints of samphire, salicornia in the long, minerally finish.
Pairings
Excellent as an aperitif, this wine matches wonderfully with battered vegetables and flans, flavoursome cheeses, and fish dishes.
Why we like it
Centuries-old native grape, Ribolla Gialla has seen its fame grow since the Middle Ages and Renaissance. Its cradle are the vineyards of Colli Orientali of Friuli that give the wine a delicate, fresh, lively character with great finesse. Mainly trained in the Guyot system, the vines of our Ribolla Gialla benefit from marl and sandstone soils of Eocene origin. The healthy and perfectly ripe grapes are harvested by hand, to preserve the integrity of the berry. Carefully destemmed and left to macerate for a short period, the fruit is then soft crushed and the must obtained is allowed to settle. The must ferments in temperature-controlled stainless-steel tanks. After fermentation, the wine settles on the lees for a few months to enhance savoriness, creaminess and aging potential. The bottled wine is then aged in temperature- controlled binning cellars.
