Tasting notes
Color: Lemon yellow, with golden hues catching and reflecting the light.
Nose: Releases yellow peach, passion fruit and dried apricots. Each sensation is a clear feature in a multicoloured picture, with insistent notes of toasted hazelnuts, cinnamon and a final explosion of wild flowers, mingling with yellow plum and acacia honey, in a crescendo finish.
Palate: Considerable energy outlines its development on the palate. Elegant acidity and hints of ripe mandarin and lychee are in total synergy with a mouth-filling structure. Tangy hints and an iodine aftertaste are hallmarks of an important white wine that originates in the ‘Ponca’ hills. The extraordinarily long finish denotes great ageing potential, with notes of bergamot cream and a very subtle, pleasant tannic texture.
Pairings
Seafood, oysters, caviar, raw fish, shellfish, seaweed and other salty flavours. A perfect accompaniment to white meats with mild condiments.
Why we like it
The noble white blend of Friulano, Sauvignon, Pinot Bianco, Malvasia Istriana and Ribolla Gialla originates from the historical vineyards of the Abbazia di Rosazzo to celebrate its thousand-year-long history of viticulture. Mainly trained in the Cappuccina system, the vines benefit from marl and sandstone soils of Eocene origin. The healthy and perfectly ripe grapes are harvested by hand, in small crates, to preserve the integrity of the berry. Carefully destemmed and left to macerate for a short period, the fruit is then soft crushed and the must obtained is allowed to settle. The must ferments in temperature-controlled stainless- steel tanks. The wine is racked into oak casks where the alcoholic and malolactic fermentation are completed. It then settles on the lees to enhance savoriness, creaminess and aging potential. Tertiary aromas will develop over the years to come.
